been an experienced sushi chef for more than 20 years and been
in the restaurant business for more than 30 years.

one of Mr. Chin’s signature rolls. Each roll is created
with a combination of ingredients unique from any other roll.
Rolls like our “3 Amigos” made from crunchy yellowtail,
cucumber, scallion, and topped with eel, smoked salmon, avocado,
served with Raspberry vinaigrette salad or the “Dragon Tail”
made with crispy sea eel, Japanese omelet, oshingko, scallion,
and topped with avocado, tobiko & black masago. Both rolls
are our most popular and can only be found at “Shallots”.
